Mini Strawberry Rhubarb Shortcakes Recipe

yields 12 mini cakes
You will need:
- 1 box Pillsbury Moist Supreme Yellow Premium Cake Mix
- 1 jar Palisade Peach Shack's Strawberry Rhubarb Preserve
- 2 cups fresh strawberries
- 1 cup water
- 1/2 cup vegetable oil
- 3 egg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Whipped Cream:
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1tablespoon confectioner sugar
Baking Instructions
Shortcakes
Preheat the oven to 350 degrees.
In a large bowl, combine cake mix, water, oil, eggs, salt, and vanilla. Whisk together until well combined.
Grease a muffin tin with cooking spray. Using a 1/4 measuring cup to scoop batter into the tin. The measuring cup will help keep the cakes equal sizes.
Bake mini cakes for 22 minutes or until cakes bounce back when gently pressed.
Allow shortcakes to cool in the tin for 4 - 5 minutes, remove them from the pan, and let them completely cool before decorating.
Whipped Cream
In a large bowl, whisk cream for 1 minute, then beat in vanilla and sugar until stiff peaks form. Try not to over whisk.
[ You will know you over whisk if the cream becomes lumpy and butter-like. ]
Once the cakes have completely cooled, you can start assembling. First, scoop a tablespoon of Palisade Peach Shack's Strawberry Rhubarb Preserve on to the top of a mini cake. With a spoon, dollop whipped cream on top of the preserves, place sliced strawberries into the whipped cream. Repeat this step until all the cakes have all been decorated. Serve.
