With Valentine's Day right around the corner, we thought it would be the perfect opportunity to highlight a few of our family's favorite meals. The month of February is a time to come together with your loved ones and let them know how much you care and appreciate them. What better place to gather than around the dinner table. We hope these recipes bring your family as mean little moments as they have brought ours.
Breaded chicken baking in the oven
Baked vs. Fried Chicken Parmesan
One common fear in the kitchen is frying oil. The whole process is stressful and unnecessary when cooking Chicken Parmesan. By baking the recipe rather than frying, we remove the stress and make it a little healthier. When using the frying method, oil drenches the chicken and adds difficulty to the recipe. For novice cooks, this leaves a lot of room for error. Not being master chefs ourselves, we prefer the baking method. It requires little to no oil and promises a perfect outcome.
Oven Baked Chicken Parmesan Recipe
30 - 40 min
Serves 4
You will need:
- 2 Chicken breasts
- 1/2 tsp Garlic powder
- 1 tsp Oregano, dried
- 2 tbsp Parsley
- 1 Egg
- 1cup Palisade Peach Shack Roasted Garlic Pasta Sauce
- 1/2 tsp Pepper
- 1tsp Salt
- 2 tbsp Olive oil
- 1cup Panko bread crumbs
- 1 1/2 cups Mozzarella
- 1/2 cup parmesan cheese, grated
- Fresh basil
Cooking Instructions
Preheat the oven to 400 degrees.
Start by lining a baking sheet with foil. Brush olive oil evenly over the foiled baking sheet. Set aside.
Cut the chicken breasts in half, place the cut chicken into a gallon-sized bag, and pound until even thickness. Repeat this step until with the remaining chicken breasts.
With a paper towel, pat the chicken breasts dry, then season with salt and pepper.
In a dish, mix panko bread crumbs, grated parmesan cheese, salt, pepper, garlic powder, oregano, and black pepper. In a second dish, whisk one egg. Dip the chicken into the egg, then into the bread crumb mixture. Once the chicken is fully coated in bread crumbs, gently press with your hand to help the crumbs stick. Double-check the bread crumb mixture fully coats the chicken, then place onto the prepared baking sheet. Repeat with the remaining three pieces of chicken.
Place the baking sheet into the oven. Bake for 15 minutes, then flip chicken breasts and coat each piece with 1/4 cup of Palisade Peach Shack Roasted Garlic Pasta Sauce and top with cheese. Place back in the oven, and bake for another 5 minutes or until cheese is golden brown.
Remove from oven and let rest for 5 minutes. Sprinkle with fresh basil and serve.
